Would the nutrients from vegetables be lost if we fully cook them?

The cooking of vegetables will inevitably destroy some heat-sensitive vitamins such as vitamin B and C. However, we do not recommend serving uncooked or raw vegetables to children/students due to food safety concerns. Preschools/schools may adopt cooking methods such as blanching, steaming or light stir-frying to retain most of its nutrients. Overall, having a balanced meal according to My Healthy Plate will also help to ensure sufficient nutrient intake.
